It's another way to enjoy carrots. Grilling mellows the spiciness and makes them the most enjoyable bite! Toss them all in a salad and they make a fresh and tasty salad with tomatoes and cucumbers. Turnip greens are also used and emphasize this nicely.
1. 1 cup fresh carrotes (large ones cut in half);
2. Radish greens (thinly sliced);
3. 2 cups tomatoes (diced);
4. 2 cups of cucumber (sliced);
5. ¼ cup EV olive oil;
6. 2 tablespoons of apple cider vinegar;
7. 2 tablespoons of honey;
8. 1–100 g goat chili goat cheese.
1. Roast carrot and onion slices on a preheated grill. Good caramelization all around. Add to mixing bowl.
2. Add carrot greens, tomatoes and cucumbers, then olive oil, vinegar and honey. Stir well to incorporate all ingredients.
3. Season with salt and pepper.
4. Serve the salad in a bowl and top with crackers or feta cheese.
